Food, Culture, and Identity

Gothenburg’s identity is tied to food. West-coast seafood has always been central, from the shrimp at Feskekôrka to the fish counters of Stora Saluhallen, and a number of ambitious Nordic chefs work here rather than in the larger cities, drawn by the local ingredients; Koka, Bhoga and SK Mat & Människor are among them (see Michelin-Starred Fine Dining). The Swedish idea of lagom, balance, shows on the plate as well-executed simplicity alongside experiment.

PRACTICAL SAMPLE

How Gothenburg Dining Works

Gothenburg is an easy city to eat alone in: service is direct without hovering, and many places are built around counters, from the Feskekôrka fish counter to the bars in Stora Saluhallen.

The dagens lunch, the set midday meal, is the value meal: a main course with bread, salad and coffee for a fraction of the dinner price, and a lunch booking for one is easy to make on the day (see Dagens Lunch). The afternoon belongs to cafés such as Café Husaren and Caféva (see Fika).

The regional food to look for is west-coast seafood (shrimp, crayfish, oysters, mussels), the seasonal New Nordic cooking of kitchens such as Koka and Bhoga, and husmanskost, Swedish home cooking: meatballs, gravlax, herring.
